Beetroot soup 1


 Recipe for beetroot soup (makes 2 portions)

  • 250g cooked beetroot (not in vinegar)

  • 1 carrot

  • 1 potato

  • ½ onion

  • 500ml vegetable stock

  • pepper to taste

  • 2 tablespoons low fat plain yoghurt

Peel & dice the vegetables and add to the vegetable stock in a saucepan, bring to the boil & simmer until tender. Take off the heat & use a liquidiser or hand blender. Add pepper to taste, stir in the yoghurt & serve.

Beetroot soup may not sound very appetising but I have been told by people that do not even like beetroot that they love the soup! Liquidised food actually helps keep you feeling full for longer so soup is an excellent choice for a slimmer. The beetroot soup contains two portions of vegetables and is packed full of goodness.
