Savoury Pancakes


  • 100g plain flour
  • 2 eggs
  • 300ml milk
  • 1 tablespoon vegetable oil
  • Fillings – add to taste – onions, peppers, mushrooms, tomatoes, leeks, courgettes etc.
  • Ham
  • Cheese, grated
  1. Preheat the oven to 180 C / Gas mark 4
  2. For the pancakes, place the eggs, flour and milk in a large bowl and whisk together to make a thick, smooth batter.
  3. Heat the oil in a frying pan and slowly pour in enough batter to coat the bottom of the pan.  Fry for 2 minutes or until golden-brown underneath then carefully turn the pancake over and fry the other side for a further 2 minutes.  Repeat with the remaining batter.
  4. For the filling, heat the oil in a frying pan add the vegetables and cook until softened.
  5. Spoon the vegetable filling into the pancakes, add ham if you wish, wrap the pancakes up and place into an oven-proof dish and sprinkle over the cheese.
  6. Bake in the oven for 15 minutes.
