- 100g plain flour
- 2 eggs
- 300ml milk
- 1 tablespoon vegetable oil
- Fillings – add to taste – onions, peppers, mushrooms, tomatoes, leeks, courgettes etc.
- Ham
- Cheese, grated
- Preheat the oven to 180 C / Gas mark 4
- For the pancakes, place the eggs, flour and milk in a large bowl and whisk together to make a thick, smooth batter.
- Heat the oil in a frying pan and slowly pour in enough batter to coat the bottom of the pan. Fry for 2 minutes or until golden-brown underneath then carefully turn the pancake over and fry the other side for a further 2 minutes. Repeat with the remaining batter.
- For the filling, heat the oil in a frying pan add the vegetables and cook until softened.
- Spoon the vegetable filling into the pancakes, add ham if you wish, wrap the pancakes up and place into an oven-proof dish and sprinkle over the cheese.
- Bake in the oven for 15 minutes.
