Salsa


 1 teaspoon olive oil

½ small onion, chopped finely

1 garlic clove crushed

1 teaspoon chilli powder

1 x 420g can of chopped tomatoes

2 tablespoons tomato purée

4 tomatoes chopped

1 pepper de-seeded & diced

2 spring onions chopped

There are lots of recipes for raw salsa but I really like this cooked recipe as it combines the different textures in a very pleasant way. Try it!

Heat the oil & fry the onion for a few minutes until softened, add the garlic & chilli powder. Next add the canned tomatoes & tomato puree. Bring to the boil & simmer for 10-15 minutes or until thickened. Stir in the tomatoes, pepper & spring onion for a further few minutes or until your preferred texture is reached! I like to leave a bit of crispness / bite in mine! Enjoy!
